Méthode vs. pét-nat
Méthode champenoise finishes a still wine first, then starts a second fermentation in the bottle — fine bubbles, years of aging, a lot of labor. Pét-nat bottles the wine before the first fermentation has finished, so the fizz is whatever the yeast has left. Softer bubbles, cloudier glass, more surprise in every batch. Both are on this trail.
