WHAT CRISP ACTUALLY MEANSIt’s the acid

It’s the acid

When a white tastes crisp, that is acidity doing the work — the thing that makes your mouth water and keeps a wine from going soft in the glass. Grapes lose acid as they ripen in the heat and hold onto it when the nights are cold, which is exactly what happens here. The other lever is the vessel: steel keeps a wine lean and direct, oak rounds it out and adds weight. Same grape, two different wines, and both are poured on this trail.
